5 delicious cheesecake recipes to try right now

If there’s a cake we can never say no to, it would probably be cheesecake. Be it the classic New York Cheesecake with the cookie crust, or an Oreo cookie variation with a sinful chocolate cookie bottom – we’re all down for it.

So, to pay tribute to our favourite cake of all time, here are some yummy classics and interesting variations you can try at home.

1. New York Cheesecake

Ingredients:

  • 113-226g cream cheese
  • 8 tablespoons unsalted butter
  • 2 cups sour cream
  • 1 1/2 cups sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon fresh lemon juice
  • 1 teaspoon grated lemon zest
  • 1 1/2 teaspoons vanilla extract
  • 6 eggs

Method:

  • Beat cream cheese and butter till smooth.
  • Add sour cream, sugar, cornstarch, lemon juice, zest, and vanilla extract.
  • Mix till well combined.
  • Add eggs one at a time as you’re beating, then pour the mixture into a buttered cake mould covered in foil. Bake for two hours and 15 minutes at 148°C.
  • Let cake cool in the oven for two to three hours before placing in the fridge.
  • Leave overnight.
  • It is now ready to be served.

2. Cheesecake Bites

Ingredients:

  • 1 1/2 cups cookie crumbs
  • 5 tablespoons unsalted butter
  • 453g cream cheese
  • 3/4 cups granulated sugar
  • 1/8 teaspoon salt
  • 2 tablespoons cornstarch
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 226g dark chocolate
  • 2 tablespoons virgin coconut oil

Method:

  • Mix cookie crumbs and butter to form the crust.
  • Press firmly into a pan to make sure it doesn’t fall apart when serving.
  • In a separate bowl, mix cream cheese till smooth, then add sugar, salt, cornstarch, eggs, and vanilla.
  • When mixture is smooth, pour onto the crust.
  • Bake at 162°C for 30 minutes, and let cool in the oven for another 20 minutes.
  • Transfer to the freezer for at least two hours.
  • In the meantime, melt dark chocolate and coconut oil.
  • Once set, slice cake into cubes and dip each cube into melted chocolate to coat it completely.
  • Serve once chocolate has set.

3. No-bake Oreo Cheesecake

Ingredients:

  • 35 Oreo cookies
  • 5 tablespoons melted unsalted butter
  • 226g cream cheese
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla
  • 226g whipped cream

Method:

  • Crush 25 of the Oreo cookies and mix with melted butter to make the crust.
  • Press firmly into a pan to make sure it doesn’t fall apart when serving.
  • In a separate bowl, mix cream cheese, sugar, and vanilla until the mixture is smooth.
  • Crush eight of the remaining Oreos into chunks, then add to the mixture.
  • Slowly fold in whipped cream.
  • Pour everything onto the Oreo cookie crust and chill for two hours.
  • Serve with the remaining Oreos as garnish.

4. Chocolate Cheesecake

Ingredients:

  • 150g digestive biscuits
  • 45g melted butter
  • 120ml whipped cream
  • 150g melted dark chocolate
  • 2 tablespoons cocoa powder
  • 200g cream cheese
  • 110g caster sugar

Method:

  • Crush the digestive biscuits and mix with melted butter to make the crust.
  • Press crust firmly into a pan to make sure it doesn’t fall apart when serving.
  • In a separate bowl, whip cream till fluffy, then add in the melted dark chocolate and cocoa powder. Keep aside.
  • In another bowl, mix the cream cheese and sugar until the mixture is smooth, then slowly fold in the dark chocolate mixture.
  • Mix well and pour onto crust.
  • Chill for an hour and then serve.

5. No-Bake Peanut Butter Cheesecake

Ingredients:

1 1/2 cups Oreo cookie crumbs
1/3 cups melted unsalted butter
1 1/2 cups whipped cream
567g cream cheese
1 1/4 cups peanut butter
1 1/4 cups powdered sugar
1 1/2 cups chocolate chips
1 bag Reese cups

Method:

  • Mix Oreo cookie crumbs with melted butter to make the crust.
  • Press crust firmly into a pan to make sure it doesn’t fall apart when serving.
  • Beat the whipped cream until fluffy.
  • In a separate bowl, mix the cream cheese, peanut butter, and powdered sugar until the mixture is smooth.
  • Slowly fold in the whipped cream.
  • Pour the mixture onto the crust and leave in the fridge for two hours.
  • Melt chocolate chips, then drizzle over cheesecake. Decorate with chopped Reese cups.
