Get To Know: Ling’s Focacceria

While it is easy to assume that Ling’s Focacceria is the brainchild of someone who has been baking bread for ages, a conversation with founder Choy Ee Ling revealed otherwise: she only started when the pandemic hit in 2020. From Mediterranean flavours such as sun-dried tomatoes, olives and rosemary to the Asian-inspired miso butter, honey and sesame seeds, patrons are spoilt for choice with the variety of focaccia flavours offered here. Each one is equally delightful, with a lovely crispy exterior while remaining unbelievably soft and chewy on the inside. How about trying the “bestest buttered bread”? With such a name, you know that you’re in for a treat: creamy slabs of butter encased inside the classic Genovese focaccia (made with olive oil and Maldon sea salt flakes). It’s a delicious reminder that the simplest things can be the best ones. The kaya butter toast is another pleasant blast to the past. Here, toasted genovese focaccia is filled with slabs of butter and a generous helping of decadent kaya that is made in-house. Savouring this may conjure memories of enjoying a similar treat when you were growing up. For something heavier, how about giving the otak-otak with gochujang focaccia a try?
