How losing her job turned into sweet success for this baker

After losing her job due to Covid-19, Sarah-Jade Schipper found solace, and an income, in baking scones, crumpets, brownies and granola.

When 33-year-old Sarah-Jade Schipper was let go from her job at a logistics company in March due to the Covid-19 outbreak, she was crushed.

She looked for jobs for months, but the state of the economy was no help.

In August, she found herself staring at a jar of granola she’d made and thought, “Why not make this into a business?” and Goodness Bakes Malaysia was born.

“I love granola, so I thought why not try selling my own granola?” Schipper told FMT, adding that she loved how hers tasted – store-bought granola is often expensive and have very little goodies in them, she said.

Delighted by how well her granola turned out, Schipper offered her friends some for a taste test. They loved it and encouraged her to package and sell it.

Today, Schipper bakes four kinds of granola with nuts – Coco-nut, Nuts About Raisins, Cocomond and Raimond.

For those with a nut allergy, they can indulge without worry in the Seedy One that consists of oats and different seeds. And customers looking for a caffeine fix in their granola should keep an eye out for the delicious chocolate espresso granola.

“There is just honey and coconut oil in my granola. Absolutely no preservatives and no added sugar, and for the health-conscious I have included the nutritional value on the packaging so they can track their macros too,” said Schipper.

Another favourite on her menu is scones, which were inspired by her mother who positively adores these English teatime treats.

Curious, Schipper gave scone making a whirl and it was a golden, flaky, flavourful success.

“It’s tough to find delicious scones and when I gave them to my friends to try, they loved every bite and suggested I add them to the menu.”

Schipper’s signature butter scones are best enjoyed with clotted cream and jam or if you’re feeling cheesy, give the cheddar cheese scones a try.

There is also a range of vegan scones she bakes, using unsweetened soy milk and vegan butter. They are such a tasty treat that vegan and vegetarian restaurant the Hungry Tapir has added them to the afternoon high tea.

But do not expect giant-sized scones as Schipper prefers them small and dainty, to pair perfectly with a cup of tea.

This chocolatey delight is fudgy from the addition of chocolate chunks that give the brownie a chewy texture that still stays miraculously light.

Schipper said the addition of the brownies to her menu was inspired by her boyfriend, who devours them like there’s no tomorrow.

“In fact, it’s his cravings that I’m trying to fix, and the brownies are based on his expectation of what the ultimate brownie should taste like.”

“I’m usually not a fan of brownies because I do not like how sweet they can be, but I have to give myself a pat on the back because these are that amazingly good,” said Schipper, slyly admitting that every time she makes a batch, she prepares a small batch for herself on the side.

Have you ever sunk your teeth into a fluffy, buttery loaf cake with chunks of juicy apples and swirls of cinnamon inside? Well, once you do, you’ll fall in-love with Schipper’s humble but delicious Cinnamon Apple Fritter Loaf made with fresh Granny Smith apples.

Schipper also bakes crumpets, perfect for breakfast or afternoon tea. “I like baking … because I can work on my own time. Plus, I bake the goodies I love and they have to meet my personal expectations. I do not believe in skimping on ingredients.”

According to this queen of sweet treats, business has been good, but would she pursue this as a full-time career? She admits that would be a blissful option, but it’s too early in the game to decide.

“At this point in time, I’m not exactly rolling in dough that I can think of getting an external kitchen because, obviously, with baking from home, I can only bake so much.

“I cannot cater for even 100 orders now because I do not have the space for that. However, I do hope I can do this long term because it’s very liberating doing something that you enjoy.”
