
This recipe for soba noodles with sweet ginger sauce is very easy to follow, resulting in a healthy and delicious meal in under 15 minutes.
The only thing that needs to be cooked is the soba. Mix the sauce and toss, and you will get noodles that are savoury with a hint of sweetness and gingery nuance in every bite – perfect for the entire family!
Ingredients
- 55g soba noodles
- 1 teaspoon sesame seeds, lightly toasted
- Chopped scallion, for garnishing
- Salt and pepper to taste
For the sauce:
- 2 teaspoons soy sauce
- 1/2 teaspoon ginger, minced
- 2 teaspoons sesame oil
- 1/2 teaspoon chilli oil
- 1/2 teaspoon rice wine vinegar
- 2 teaspoons honey
- Salt and pepper to taste

Method
- Mix all the ingredients for the sauce in a bowl. Set aside.
- Boil the soba according to the instructions. Drain well with cold water.
- Add the sauce and sesame seeds and toss well. Garnish with chopped scallion and serve immediately.
