
Oven-baked cod is one of the best fish recipes, and the end result is always juicy and moist. As cod has a very mild flavour, just a few ingredients such as lemon and cayenne pepper are required.
This simple, healthy recipe is high in protein, low in fat, and only requires five minutes of prep time. It’s a great dinner idea for busy weeknights!
Ingredients
- 400g cod fillets, rinsed and patted dry
- 1/4 teaspoon salt
- 1 tablespoon lemon juice, freshly squeezed
- 3 dashes cayenne pepper
- 1 1/2 tablespoons olive oil
- 1 tablespoon chopped parsley

Method
- Preheat the oven to 205°C.
- Arrange the fillets in a baking tray. Drizzle the olive oil onto the fish, followed by lemon juice, salt and cayenne pepper.
- Bake for 10-12 minutes, depending on the thickness of the cod.
- Garnish with parsley and serve immediately with side dishes such as boiled potatoes or steamed vegetables.
Tip: You may use frozen cod fillets. Leave them to thaw beforehand, and make sure you pat the fillets dry to remove excess water.
