Prawns, to many, are a luxury seafood ingredient. After all, 1kg of fresh prawns costs upwards of RM30 – although if you have an entire kg of the freshest prawns at your disposal, it pretty much guarantees a day or two of great eating!

Here’s the simplest way to prepare prawns at home, using basic ingredients you should already have in your pantry.

Ingredients

  • 1kg fresh prawns
  • 5cm ginger, sliced
  • spring onions, cut into 5cm pieces and sliced lengthwise into thin slivers
  • soya sauce and shaoxing wine

Method

  • Place the prawns on a stainless steel plate, topped with the ginger and spring onions.
  • Bring a steamer to boil and cook on high heat for 10 minutes.
  • Remove from heat when the prawns are cooked. They are ready when the flesh is a firm white and bright orange.
  • Mix two parts shaoxing wine with one part soy sauce and use this as a dipping condiment.
  • Enjoy!

Tip: You may peel the prawns prior to steaming, but there is a certain joy in picking the shells apart with your fingers as you’re eating them.
